La sua missione \u00e8 proteggere le materie prime, essendo un fautore della filosofia del \u201cpreparato in casa\u201d.<br>Non esiste qualit\u00e0 scontata, ed \u00e8 per questo che lo Chef non scende a compromessi, cos\u00ec da garantire un\u2019eccellenza costante. Per lui la cucina non \u00e8 un set mediatico, ma un luogo magico dove l\u2019artista d\u00e0 vita alla sua anima in un transfert concreto tra la creativit\u00e0 e il cibo.<br>Nato a Varese nel 1973, amante degli animali e dello sport, Roberto ama condividere la sua passione con i suoi pi\u00f9 giovani collaboratori, aiutandoli in un difficile percorso fatto di sfide e momenti di sconforto, ma ricco di momenti gratificanti e di grandi soddisfazioni. Nella cucina dell\u2019hotel nascono i prodotti pi\u00f9 genuini, come fossero sfornati in casa: pane, focacce e paste trafilate al bronzo. La caratteristica che contraddistingue Roberto e che lo rende unico sul panorama nazionale \u00e8 la sua poliedricit\u00e0. Infatti, sono pochissimi gli chef specializzati sulla cucina gastronomica \u201cdisposti\u201d a spendersi anche in servizi tipicamente alberghieri opposti come il breakfast o una cucina pi\u00f9 informale. E cos\u00ec, Roberto passa da un fornello dove prepara un piatto della tradizione come le trofie al pesto o gli spaghetti alle vongole ad un altro dove le protagoniste possono essere delle capesante o delle ostriche riviste in chiave gourmet. Dal salmone affumicato in un binomio delicato con una mostarda di mele e ananas agli acclamati \u201cSpaghettoni del Pescatore\u201d serviti in una cocotte di ceramica \u2013 in assoluto il nostro best-seller &#8211; per finire con un frozen accompagnato da croccanti lamponi disidratati e fatti mantecare nel burro di cacao. Oppure, il classico tiramis\u00f9, sempre nel rispetto della tradizione. Che sia il nostro 18.97 Bistrot Contemporaneo oppure il Gazebo &#8211; la proposta gourmet &#8211; tutto \u00e8 curato con la solita passione.
